Fabulous and Refreshing BLT Salad

When drip-down-your-arm good tomatoes finally do arrive at the markets, they aren’t around long enough. I plan months in advance how to work them into our menus. So, embarrassed by my obsession with the tomato, only because my husband was beginning to wonder, that I came up with this clever variation, the BLT salad. What better way to use those savory and crunchy homemade croutons from the previous entry?

I made up a quick dressing with a cup of bottled buttermilk ranch, added 2 green onions finely diced and 2 tablespoons of chopped basil. Thinned it out a little with a half of a lime’s juice and viola’, a delicious semi-homemade dressing.

For the salad:
1/2 head of crisp romaine lettuce
8 slices of thick sliced bacon, cut crosswise into 1/2-inch strips
2 medium tomatoes, peeled, cored, and cut into large chunks
1 cup of homemade croutons

In a large nonstick pan, over medium heat, cook bacon until brown and crispy. Drain on paper towels.
Meanwhile, arrange salad greens on the serving plates.
Top with tomatoes, croutons and bacon. Drizzle with dressing.
